Minnie's cake

Un sofficissimo pan di spagna farcito con vellutata di frutti di bosco e crema pasticcera per la piccola Emmy.




Recipe for Pan di Spagna cake:
  • 4 eggs
  • 100 g flour
  • 50 g cornstarch
  • 150 g sugar
  • 7 g gaer
  • vanilla or lemon zest
  1. Whip the egg whites with a pinch of salt.
  2. Separately, whip the egg yolks with the sugar.
  3. Combine the egg whites and the whipped yolks, stirring gently from bottom to top.
  4. Add flour and baking powder sifted.
  5. Pour the mixture into a baking pan of 20-22 cm in diameter.
  6. Bake at 190 ° for the first 10 minutes, then lower the temperature to 180 ° for another 15-20 minutes. Always do the toothpick test, but not before 25 minutes otherwise the cake collapses.
